Coconut flour is gluten-free, high in fiber, and makes an excellent substitute in all gluten-free baking. Substitute 1 cup of wheat flour for ⅓ cup of coconut flour while doubling the amount of eggs, or egg substitute, and adjusting liquid to personal preference.
